Of course it will work. On a 2,5 rim! I never ran anything wider than 120 (except the Deserts at 140) on my SE. Wide tires suck offroad.

On the 4" rim the tire will be almost flat in profile.

A low fender is used mainly to aid the cooling, there is a big difference in cooling between high and low fender. Just look at the rear of your high fender to see how much it will obscure the rad....
