I don't understand the fascination with the high fender, it seems you would get massively better cooling with a low fender and the low fender packing up is rarely an issue in the desert.

I think the fundamental problem you'll have is weight distribution. Bikes meant for off-road will have a significantly larger portion of the weight distributed to the rear. That's a pretty tough one...
