How risky, weather-wise is planning a trip, 2 up on a BMW RT, in early September (Rapid City to Yellowstone and back). We had planned on a July time frame, but things just look really crowded then....

I agree, I saw a lot of stuff I wouldn't have wanted to do, chase vehicle or not. Also, there was no attempt in the film to hide the fact that they had support vehicles and what the exact plan was....
