Mine is set up for CHT (spark plug) and mid-300s is nothing in traffic. My warning lights are set to 375 and 400.

I think I hit 365 in stop and go freeway traffic...

It's not nonstick- you will need to coat it in oil just as with cast iron.
It survived a 30 day trip through the desert on my DR in a dry bag just fine....

I use a 6" diameter steel pizza pan. No ribs. Works great and steel is tough enough for when you drop the bike on it. Still a lot lighter than iron, which I love to cook on at home.
