I have a feeling that with 90-100 k of fuel, water and snacks onboard, the BRP would lose a bunch (maybe all) of it's fun and feel more like a Ural with bad gas.

Doing a rebuild of any engine with just a shop manual is not so easy. Sooner or later, you will wind up looking at something from an angle that just isn't covered in that manual or in the parts...
