The devil is in the details, and when you go through so much effort and expense to put restore an Indian it make sense to use authentic looking hardware. The only time I ground the markings off the heads was when I did my 24 Chief and needed hardware nickle plated. And that was a long time ago when there were not an good sources for bolts.
