I'm surprise that the big GS is so popular in Europe. Almost no unpaved roads, small streets, super tight packed traffic. If I move back there I'd get a more sport touring oriented bike, like a Multistrada or even something smaller to filter through the traffic.

Riding the big girl in Europe would be utterly fantastic. Savines-le-Lac to Reallon and then to the end of the road at Gournier and then hiking to the Rhododendron forest comes to mind. This would be a spectacular ride on a narrow paved road then over to a really cool dirt road up to a ski area. Or how about Forcaquier to Riez to Castellane then south through Mons and onto the Cote d'Azur.
The big girl would fit in France nicely!
