On the bike I am running Wolfman Daytrippers and a small rollie bag on the tail. I also have two primus fuel bottles that clip in if I need them.
The rollie bag has my rain jacket and rain gloves.
The daytripper bags are awesome - I have a front and rear tube, pump, full tool kit, tow strap, full size 14" tire irons, quick steel, etc etc - and they are only half full (they have cinch straps to secure the extra space). I never even notice them being there no matter how extreme the terrain. I highly recommend them.
