I've got quite a few mods, none of which I planned. They just kind of happened slowly from talking to other riders and reviewing the internet:

-TAG XS aluminum bars (replaced the steel ones 3 times before i got smarter)
-GPS, Ram mount
-Cig lighter
-Enduro Engineering barkbusters
-Kenda 760 tires
-Enduro mirror (I pull the stock mirrors for off road stuff)
-13T front sprocket
-Ricochet / Utah SC Skid plate
-E-Bay luggage rack (easy to swap out, I pull it off for off road stuff)
-Wolfman Enduro tank bag
-Replacement generic taillight and subfender (looped a hillclimb)
-Buell Blast blinkers
-Unabiker radiator guards
-Removed seat strap
-Destickered entire bike
-Stainless steel front brake line
-IMS Pro footpegs
-Rear brake pedal "saver" cable
-Removed chain guard and guide (crash damage)
-Clutch and sidestand safety switch removed
-Dirt-Bike-Gear rear fender bag, Moose front fender tube bag

I think that's it...

I'm impressed by how tough this bike is. I drop it off road with some regularity and it has incurred very little damage. Every bit of my plastic is scratched and gouged, discolored... It's awesome!

It is a bit down on power, but I like it's "softer" response to throttle inputs as opposed to the instant raw power some of the bigger bikes have. Once you start revving it above 8,000 rpm, it turns into a different bike anyway.

Re: the hard starting when cold - if you turn the gas off and drain the carb by letting the bike idle until it stalls, the bike is much easier to start the next time. Turn on the gas, choke it, give it a couple seconds, and touch the starter button; mine fires right up every time now.
Dude ... the mod's are happening quickly for me , can you post some pic's of your ride? I'm looking at doing a lot of the mod's you've already done and want more detail ... cig lighter? radiator guards? footpegs? Tell me more!
