    I have some old stuff stashed that I'm not touching yet, but, other than that, all I have is cask ales, and, they don't travel well. You'll have to take a trip east!:clap

    Jim I may not of picked up on it .. what sort of beer styles do you brew?

    I'm a huge fan of Imerial Stout .. (well pretty much any stout actually) ... are these any harder/easier to brew than regular Bitter or Lager?

    I make mostly english styles, and, american pale ales. Other than that, it's belgians.

    I love a good imperial stout too on occasion, and, I'll be making one in a couple weeks, once I get stocked up again. This basement took longer than I expected:lol3 Generally, stouts aren't any more difficult than any other ale. Actually, the darker a beer, the easier they are to brew since the roasted malts hide any flaws from technique or whatever. A Good Pilsner is the most difficult beer to nail.

    Now, that said, an Imperial Stout is really difficult to get right. High alcohol brewing has it's own rules to follow, but, with an imperial stout, you need the balance of sweetness and alcohol. Too sweet, and, it's cloying. Too dry and it loses alot of rich character we love. I've never made one, but, I've decided I'm going to get one down this winter for next year. FWIW, I love Victory Storm King and Oskar Blues Ten Fidy. Awesome stuff! :freaky:freaky:freaky:freaky:freaky:freaky

    Thanks! I took a few more pictures today, jsut since it was my first brew in the basement with my new setup, but, not the whole process. I'll be racking this beer in a week or so, and, I'll be brewing again. I'll document it start to finish and add it to this thread!

    +1 on the victory really hard to get hold of in NH though. Haven't tried Oskar Blues though ... have to add it to the list :freaky

    Very nice set up! I have done some small batches before, and I am looking to get back into it sometime in the next 6 months or so. I woull eventually like to end up with a system like yours... Eventually. Right now I simply don't have the space... Or money! :deal
