Most of us buy the tracker tail piece...There are quite a few outfits that produce them...Omar's, Glass from the Past, Hot Wing Glass, etc...
I used the stock seat and rear tail piece on my Ascot, but I took them apart and shortened them by cutting about six inches from them and bolted them back together. The fit is not exact, but I like the "stock" look. I'm going to trim the back of the seat foam down to match the front part, then have the seat recovered. Man ... we should do a street tracker rally here in new mexico. There are endless dirt roads to ride here on the Bureau of Land Management lands.
If you wouldn't mind, make it an annual thing. My tracker probably won't be ready this year. A New Mexico tracker rally sounds like a great idea for the colder months when the higher elevation trails are closed.
