You don't need to ride off pavement. Mex 1 is paved all the way to La Paz and is a 2 day ride from the border. Wait half a day or a day for the ferry, ride the ferry, and you can be in Maz 4 days from the border. Although its probably quicker to skip Baja and just ride to Mazatlan. If you are planning on taking only pavement in Baja, might as well just skip it and ride some nice mountain twisties in mainland on your way to Maz.
