There are MANY bikes that make good Cafe Racers. from vintage to modern . and the term is vague . that said I have had both old and new BIG bore bikes all the way down to 50cc .
Depends what you want out of it .
Here is my 69 Trident 750 triple Cafe Rat Racer

I shifts on the "wrong side" , vibrates , doesn't stop , but puts a HUGE grin on my face when riding.
Just helped a coworker build a Ryca ... a "kit " if you would build around a Suzuki Savage . you can personalize it as you want . but all the work (other than assembly is done) gotta tell you is is FUN ... starts right up, smooth, parts available


That said I dont know if there is a "Best"

For as mean as that Ace 4-cyl race bike sounds, even now, can you just imagine the effect of that sound, if it was the first engine you heard way back in the early 20s or 30S?

I bet many a gear-head was created the first time that sound pommeled their ears. Works for me even now.
