Ok... so I (think I) recognize okra, mac-n-cheese, and cole slaw.

So, what is top left. Fish guts in cream? Clam necks?
And the bottom plate on right... calamari?

Fresh Copper River red salmon!!!!

On our way to Valdez, AKCharlie and I met up with an interesting man named Dylan, who is in the midst of doing an "around the world" tour. He celebrated visiting 50 countries with an adventure-packed, three-week stay in Alaska. We met him sort of near the Matanuska Glacier and rode with him for 1.5 days. While in Chitna we visited with some folks cleaning fresh, world-famous, Copper River red salmon and Dylan was given a couple of these delicious salmon filets, which we delightedly cooked up that evening. Dylan fried the salmon and I prepared noodles and sauteed veggies, so we had a world-class salmon pasta primavera dinner, worthy of being served in many fine restaurants.

Dylan seems like quite a gourmet cook and has a very nice rolling kitchen set up in his top box. Our first evening together he served Dylan's Delight, a pineapple/sweet corn salad.

Dylan hadn't heard about the ADV Rider Website so we encouraged him to visit and start posting info about his amazing journey. He left Switzerland 2 years and 1 month ago and is heading down to South America. His Website is:

Went riding yesterday and found a rock. On the way home decided to stop for lunch in Pittsboro, NC at the Carolina Brewery and Grill. Had the Caribbean Overload Burger chocked full of pineapple, jalapenos and Jamaican jerk sauce. Quite an interesting combination.

At The Ridge Motorports Park, Shelton, Washington.

Went to the WMRRA races at "The Ridge Motorsports Park" here in Shelton, Washington. This is a great track, still in its infancy, grand stands are a work in progress, but the 2.5 mile track is nothing short of wonderful. I have been to two of these events here and they just get better and better. The burrito was purchased from our favorite local restaurant- "Taqueria Las Palmas" (360-432-3220). In addition to their downtown location, they have a trailer they send out to do the events. The food is to die for! Here is the owner, Miguel, hard at work serving all the racers who showed up for this event!

Not much of a food but this was taken 2 weeks ago on our trip to Mitillin / Greece.. If anyone goes to that island make sure that you drink that, it's the best best ouzo ever
