I need to bottle mine...like, three weeks ago! *gasp* I have been preoccupied with other stuff. I somehow brewed a "one hop" beer for a local competition, and made it past the first round. Sunday, I serve it to the public at a ticketed event. Popular beer of the 10 brews gets to brew it with the brewery on their system, and have it on tap at all their brew pubs. Pretty cool deal...no way will I win.

It's my first shot at making yeast so I followed a recipe I found... kinda. I usually add more fermentables to up the ABV.

Did you have to boil with the fruit or did you pasteurize?

Nope, I washed it, cut off the "ends" and threw it in. For beer I would never do this, but I have seen lots of recipes that say it will be fine, and it's all kind of an experiment so I said what the hell. It's still bubbling nicely

Interesting, and they used the fruit?

I've been under the impression that if you use honey alone, and buy it pasteurized instead of "wild" you can get away with not boiling the batch, but that if you wanted to do wild honey that it should be briefly boiled, or perhaps have tablets added to knock down any batch infections prior to introducing your yeast.
