A great deal of information above . . . .. most opinion, of course, as most things are . . . . perhaps informed opnion, but opinion nonetheless.

However, there are stainless alloys these days that are more easily sharpened, and non-stainless (carbon) steel that is very difficult to sharpen . . . old knoweldge dies hard . . . . . .
