Doug,
If you take this bike down the road of bones, do you plan to do anything to raise the Air Intake. I just ask because all the videos i have seen show several water crossings. Including this one I found in Colebatch's vast library of youtube vidoes. FYI doug, you have him beat by 6 videos. So, you got a plan for the air intake, or you gonna run it the way it is?

Doug, thinking about where this trip is going and how you are building the bike - rather than customize (bash) the tank, what about adding a little more rise to the bars(Risers or taller bars)? If you plan on standing on the pegs even a little bit, that justifies adding in a little more rise, which with luck will clear the tank.
Just a thought. Based on playing with "just enough" extra rise on a coupla bikes where the bar angle/droop/pullback adjusted to suit my arms didn't suit the tank. But changing the rise rather than the bar adjustment in the clamps solved the problems without any unintended consequences elsewhere in the ergos.

Sounds (and looks) like the issue is with the Forks ~ or rather the top triple clamp, not the Bars.

It'll straighten out when he compresses the suspension.
