Gotta disagree here. Wife marinated the breasts in white wine, onions, carrots, and salt and pepper for a day. Broiled until 160Fish, and ate. It was awesome. Pretty good in a sandwich, too.


I'm cooking the legs in the crockpot with some chicken stock, hamhock and beer.

OK i have 2 easy ones.

1 Cut the meat into medallions and marinate in your favorite marinade, put on skewers with shroms bell pepper etc.grill until med rare, makes great shish kabobs, dont over cook.

2- Cut meat into steaks or medallions, marinade in orange juice concentrate overnight, grill until med rare, it taste sorta like orange beef.

Few years ago a buddy passed along some frozen snowgoose breasts he'd harvested on a hunting trip in Saskatchewan. After baking we couldn't believe they were goose; dark, finely grained and delicious. We thought he'd passed along a moose tenderloin or something similar by mistake. Wasn't until someone found a shotgun pellet that we were convinced it was goose.

+1 for wild snowgoose.

What some folks do not realize is that Geese to some degree eat what cows eat, Geese prefer grasses and grain, they are for the most part NOT puddlers like Ducks, which have a slightly different diet, i would think that is why Goose meat is red meat and Duck meat looks somewhat like dark Chicken meat and to me the two taste very different.
I like Goose better.

A good morning for sure!







Uno duck- It would have been a double but they discovered my weakness and flew directly over my head. I need a hinge in my titanium. The duck dropped 5 feet from me and I couldn't see it fall. Warm morning- bank said 42F. They were in the air 15 minutes before legal hours.

It's a small area- maybe 300 acres. The fishing is pretty good winter and summer in the ponds and river. I spend a lot of time there.
