It does look like the mileage is legitimate, but that's not an original front tire( I can't see the back one ). The front is a Bridgestone F11, not an OEM tire. You can still buy them if you wanted to.

The Maxim X was basically the same chassis and running gear, but with a liquid cooled 5-valve motor, based on the FZ750, but with the cylinders upright, instead of angled downwards, and side draft carbs instead of down draft ones. They were nearly 100 horsepower, compared to about the 65 -70 of the air cooled model. Pretty rare, and pretty quick.

Metzler ME880s work well.
Here's the info repository Chacal (XJ4ever) has amassed: http://www.xjbikes.com/Forums/viewforum/f=23.html
...and his current list of available parts (with specific model info integrated - not a whole lot of the XJ700 was used on other XJs):

No idea how experienced your local shop is in Hitachi carbs, but it is real easy to not be successful the first time around. They were all taken completely apart - right? All jets/emulsion tubes? Like, even the idle fuel mix needle valve that should be under the EPA aluminum plugs at the top/rear of each carb (right beside the enrichment valves that also should have been removed)? Microscopic jet pressed into the bottom of the float bowls is clean, right? If completely apart, you can use an ultrasonic cleaner (or just a mechanical agitator like an electric sander or such) with Pinesol or Yamaha's carb cleaner. I gave it to you previously, but here is one of the definitive guides on cleaning the XJ carbs: http://www.xjbikes.com/Forums/viewtopic/t=14692.html
