It's funny that even in my limited experience, I've thrown a leg over a few of these. Yamaha XS650, KE100, Vespa, Yamaha Seca-UJM-thing, Airhead. I just bought the BMW 2 weeks ago after not having a bike since my teens because I wanted an excuse to sit in the garage and drink beer all weekend.

I think the best way to break this down is by categories. I know my answers aren't everybody's answers, but I like the category thing so Imma roll with it.

Something small, nimble, and friendly: Honda Cub or Vespa
Something small, nimble, with a Napoleon Complex: Yamaha RD350
Something terrifying: Kawasaki H1 or H2
Something huge and cruiser-ey: 1965 Electra-Glide (last year for the Panhead)
Something from Milwaukee: Harley XR1200
Something built to get filthy: Yamaha YZ250 - an old crummy one, with bumblebee paint
Something amazingly sorted and sensible: Honda VFR750
Something that eggs you on to do silly/stupid things: early KTM Duke
Something tempermental, absurd, and Italian: S4R Monster or 900SS
Something UJM: Kawasaki Z1
Something to get on and just go: BMW airhead
Something British: Yamaha XS650

I can't see getting too specific on models.

A Harley
A Ducati or a Guzzi
A BMW
A four cylinder Japanese UJM type
A classic bike, something from the 1970s if you are older or 80s if you are younger.
A two stroke powered cycle street or dirt.
A scooter, maybe a modern one is more representative than the two stroke Vespas.

A Harley...any Hardley. Just to get it over with and finally know what an over hyped piece of garbage they actually are.

Honda Ruckus. Because it's fun passing Hardley's on the outside of corners in Chuck Taylor's with Chinese take out strapped on the back.

Kwack ZX-Ten...because if you haven't ridden a modern Literbike on the street...you probably like Hardley's & GS's. This bike is the CR Five Hundred for the street, especially the Oh-Five Gen I...wailing siren of Satan constantly tempting you until the Po-Po take your license away.

ZRex -- The UJM your mind thinks was bikes in the Eighties.

Twist-n-go, triple digit speed capable, plenty of underseat storage,
large seating area for rider and passenger.

IMO, truely suited for two-up riding of any kind.

My short list:
XR650L (DR650, KLR650) budget exploring

Yamaha GTS1000 Not just for the unique bike but also to give lessons in electronics

KTM 950R Super Enduro: not just a Adventure but a 100HP dirtbike

KX100 (as a youth) so you know what smokers are...
CR500 - KX500 (adult) lesson in humility

Yamaha R1 (bmw1000rr, GSXR, etc) so you now know what fast is...

Some type of cruiser / bagger / tourer to realize what you miss about riding the above bikes.

Seeing the ZRX pop up a lot here, and I have to agree. I've ridden a fair number of bikes and there aren't many that are quite this much fun.

That said, get yourselves on a Honda flat-six if you haven't already. Not the biggest or fastest out there, but it's a special motor.

As for me, a Ducati is on the short list, and a Harley too, just to see what the fuss is about. Also a 5th gen VFR if I ever spot a clean one for a good price at one or those magical times where I can justify buying another bike.

Also: It's my belief that everyone should try, at least once, building their own bike. Even if what comes out the other end of that process is a rolling scrap heap, there's nothing quite like riding your rolling scrap heap.
