Thanks again Turk34. I had an amazing time in Mérida! If anyone else is interested some of the things in Merida that are a "must do" include:

Monumento à la Patria, México / Maya history (see the video mapping) - while there eat a tamale from the vendor by the Panificadora Montejo bakery.
Plaza Grande - great shopping, sightseeing, historical buildings, traditional dance display, much more
Casa De Francisco De Montejo - the oldest house in Mérida
    Montejo Avenue - AMAZING architecture
Planetarium & Art gallery in the governor's building / Planetario Arcadio Proveda Ricalde
    Jose Peon Contreras Theater
Progreso Beach (about 25 minutes away from )
Hacienda Sotuta de Peon - Amazing place, great tour, swim in the cenote!
    Anthropology and History Museum
El Museo de la Gastronomía Yucateca, or the Museum of Yucatecan Gastronomy
Uxmal pyramid - My favorite Mayan pyramid!
    Ik-Kil Cenote
    Choco Story chocolate museum
Chichén Itzá - a drive, but if you have not been you have to see it
La Hacienda Xcantun Casa de Piedra - not really a "tour" but eat there and ask nicely and they will give an amazing tour!
Universidad Autónoma de Yucatán (UADY), the oldest and largest college in the Yucatán
Gran Hotel (oldest hotel in Mérida)
Mérida Cathedral (see the video mapping)

    Some great places to eat:
Amaro restaurant with Tony Martin - GO HERE!! This is why you came to México! Serious, come at night, eat under a perfect Mérida moon and listen to Tony play his guitar.
Alma Calma - very nice traditional restaurant, I ate breakfast here many days.
La Chaya Maya - traditional and great
Oliva Enoteca Italian restaurant $$ but very nice
La Tratto Italian restaurant, less $$, still nice
La Hacienda Xcantun Casa de Piedra - VERY nice; when you come for food, ask for a tour.
Paseo 60 many restaurants and Helados Colon ice cream

While in the Yucatán try these foods:
    Brazo de la Reina
    Panochos
Tamales Yucatán (made with banana leaves)
    Ceviche
Nance - delicious fruit / desert
    Horchata (drink)
    Agua de Jamaica (drink)
    Agua de tamarindo (drink)
    Jugo verde (drink)
    Agua de chaya (drink)
